CREAMY COLLARDS WRAPS WITH CAULIFLOWER RICE

This recipe is vegan

Ingredients:

3 big collard leaves

1 cup peas (fresh or frozen)

1/2 a red bell pepper, thinly sliced

1 tbsp hemp seeds

1/4 an avocado, diced

For the cauliflower rice

1 small cauliflower, diced

1/2 a stick celery

2 sticks green onion

1/4 cup cilantro

juice of one lime

For the Creamy Dressing

1 cup fresh coconut meat

1/4 cup water

1/2 cup peeled zucchini

3 tbsp lemon juice

2 Medjool dates, pitted

2 sticks green onion

1/2 tsp mustard seed powder

sprinkle of sea salt


Directions:

  1. Pulse in the food processor all the cauliflower “rice” ingredients. Set aside

  2. Blend the creamy coconut dressing ingredients in a high speed blender. Set aside

  3. Layer and spread the collard wraps with the coconut dressing. Top it with a couple scoops of cauliflower rice and the veggies. Finish off with a sprinkle of hemp seeds. Wrap it up like a burrito and go to town!
