CREAMY SOBA NOODLES

This recipe is vegan

Ingredients:

6 blocks of rice ramen noodles

2 c lettuce, diced

1 1⁄2 c carrot, thinly peeled into strips

1 c cherry tomatoes, sliced

1⁄4 c green onion, diced

3 T toasted sesame seeds

FOR THE PEANUT SAUCE

1 1⁄2 c peanut butter

1⁄2 c coconut aminos

1 big lime, juiced

2 T maple syrup

1 large clove garlic

1 T raw ginger, peeled

1⁄4 t pepper

1⁄2 t salt

3⁄4 c water


Directions:

1. Cook the noodles according to package instructions.

2. Blend all of the sauce ingredients until smooth.

3. Mix the noodles, sauce, lettuce, carrots, and tomatoes together in a large serving bowl. Top with green onion and sesame seeds and enjoy!
