BAHN MI

Ingredients:

1 Baguette

Sliced, seared pork belly

mayo

mint leaves

cilantro

cucumber, cut into long thin strips

fresh jalapenos, thinly sliced

Pickled carrot and daikon (recipe below)

Sandwich juice (recipe below)

Directions:

Prep pork belly: sear 3- 4 inch slabs in a saute pan over medium-high heat until just browned and crisp on both sides and warmed through, about 1 minute per side.

Slice baguette open on one side, creating a sandwich pocket. Set in 3-4 pieces of pork belly then place in 425 degree oven to refresh and crisp for 2-3 minutes.

Spread on mayo and then add cucumber, jalapenos, a good amount of carrot-daikon slaw, fresh herbs, and a generous spoonful or 3 of the sandwich juice.

Pickled Carrot and Daikon Slaw:

1 3/4 c. shredded daikon

1 3/4 c. shredded carrot

1/4 c. water

1/2 c. rice vinegar

1/2 c. white vinegar

1/2 c. sugar

3/4 tsp. salt

Bring water, vinegars, sugar and salt to a boil in a pan. Pour over a mix of the shredded veggies.

Sandwich Juice:

2 Tbsp lime juice

2 Tbsp brown sugar

2 Tbsp fish sauce

2 Tbsp sambal chili

Combine all ingredients in a bowl.
