FIESTA CORN

My husband loves to make this, he takes a page from one of Bobby Flay’s books.  We’ve adapted it based on our taste/preferences, and what we have available in our CSA share!  This is an awesome side when you’re grilling meat, because you can throw the corn on to cook it, have someone else finish it inside and when the meat is done, the corn side dish is done.  I’m not giving exact measurements for the veggies, use the ratio that you have in your share, or what you feel is right! It will still taste delicious. 

Ingredients:
Corn – silk removed (retain husk) and soaked for 10 minutes
Green Onions, diced
Peppers, diced
4 Tablepoons Butter, melted
The Juice and Zest of 1 Lime
Salt & Pepper
 

Directions:
Carefully peel back the husks of the corn. Remove the silk and return husk to original position.  Soak corn for at least 10 minutes (so it doesn’t burn on the grill!).  Place corn (in husks) directly on the grill grates and cover.  Turn every 5 minutes (for a total of about  15-20 minutes).
 
Inside, prep your veggies and lime butter.  Sautee peppers until soft (not mushy) in a large skillet with a little bit of olive oil/fat.  Once soft, add the green onions and turn off the skillet.  Zest and juice your lime and mix with the melted butter in a large bowl.  Add the peppers to the butter.
 
Once the corn is complete, cut it off the cob and mix it together with the peppers, green onion and corn mixture. Salt and Pepper to taste – enjoy!
