BAKLAZHAN WITH GARLIC & TOMATO
Ingredients:
Eggplant, diced into small cubes
Tomato, diced into small cubes
2-3 cloves of garlic, minced
a few fresh basil leaves, sliced thinly (Optional)
1-2 tablespoons cooking fat/oil
Salt and Pepper
Directions:
Heat oil in skillet until shimmering. Add garlic and sauté until golden and fragrant. Add the eggplant and sauté until soft and some edges are golden brown, about 5 minutes. Add tomatoes and let some of the juices release, stirring frequently for about 5 more minutes. Salt and Pepper to taste. Turn off the skillet and add the fresh basil, stirring to mix it all together. Serve over rice or in bowls.
