DILL & MUSTARD POTATO SALAD
Ingredients:
4-5 New Potatoes (do not peel!)
½ Cup Mayonnaise (make your own, you’ll never go back to store bought) – my favorite recipe is here (except I make it with Walnut Oil)
¼ Cup of Dill
½ Teaspoon Lemon Juice
½-1 Teaspoon Mustard (Stoneground, Dijon, Horseradish, take your pick)
Salt and Pepper to Taste
Directions:
Cover the potatoes in a pot with water. Add a few sprinkles of salt and bring to a boil. Cook until just tender (check around 15 minutes, you don’t want them mushy). Drain potatoes and let them come to room temp. Once cool, cut into cubes. Mix together the mayonnaise, lemon juice and mustard. Mix into the potatoes and add the dill, and salt and pepper to taste.
