SWEET POTATO SOUP
Ingredients:
1 shallot, diced
2 cloves garlic, minced
4 c. sweet potatoes
2 TBSP brown sugar
1 TBSP candied ginger or ½ TSP dried ginger
¼ TSP ground cinnamon
¼ TSP ground nutmeg
1 TBSP salt
1 quart water or stock
1 c. milk
Toppings: bacon, more candied ginger, toasted and chopped almonds, etc.
Directions:
Heat 1 TBSP oil or bacon drippings (!) in large pot. Add shallots and sautee until translucent. Add garlic and sweet potatoes and let soften for 5 minutes.
Add brown sugar, salt and spices and cook until slightly fragrant. Add water or stock and bring to a boil.
Once boiling, drop the temperature until just simmering. Let simmer for 30 minutes until sweet potatoes are very soft.
Puree soup with immersion stick blender or in a blender until smooth.
Add milk and bring just to a boil. Taste for salt or other spices still needed. I found this soup needs more salt than I expected. Top in bowls with extra toppings.
Enjoy with brown rice or a side salad to make it a meal!
