FRIED DAIKON CAKES

Makes 8 cakes
 
Ingredients:
1 ½ C. grated daikon radish (washed and scrubbed clean)
2 teas. Salt 
6 oz. Raw, peeled & deveined shrimp, finely chopped (approx. ¾ cup) (optional)
1 clove garlic, minced 
2 green onions, finely chopped
1 egg, beaten 
1/3 cup bread crumbs 
½ teas. Ground black pepper 
½ teas. Paprika 
1 teas. Sriracha
2+ TB. Olive oil for frying
 
Instructions:

  1. Place the daikon in a large bowl and sprinkle with the salt. Toss to distribute the salt. Refrigerate for 30 minutes. Drain daikon and squeeze out any excess liquid.

  2. Stir in the raw, chopped shrimp (if using), garlic, onion, egg, bread crumbs, pepper, paprika, and Sriracha sauce. 

  3. Mix well and form into 8 small round patties.

  4. Add oil into a large skillet. Heat over medium heat. Fry patties in the hot oil until firm and nicely brown, about 3 minutes per side. Drain on paper towels.

Notes: 
This recipe doubles or triples very easily. Eat straight, or serve with some mayonnaise mixed with Sriracha and chives.
