DELICATA SQUASH CURRY

Takes 30 minutes
Serves 4
Ingredients:
1 head Komatsuna Asian greens
2 tablespoons olive oil
1 large shallot, diced
1/2 teaspoon Kosher salt
1 tablespoon maple syrup
1 tablespoon curry powder
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1 can coconut milk
1-1/2 cup chicken or vegetable broth
1 delicata squash, seeds removed and cubed
1-2 cups cooked white rice
Directions:
Prepare Komatsuna greens by thinly slicing the stems and roughly chopping the greens. Keep them separate as they will be added to the pot at separate times.
In a large stock pot, heat olive oil over medium heat. Add shallot and the Komatsuna stems. Reduce heat to medium low and cook for 3-5 minutes until shallots are beginning to brown. Add syrup and spices. Cook for 30 seconds and then add coconut milk, broth and squash. Bring mixture to a boil and then reduce to a simmer. Cook for 15 minutes. Add greens and cook until wilted, 3-5 minutes longer.
Serve over cooked rice.
