In 2024 we fenced in our organic pasture to attempt to revive a historic peasant tradition - the artful raising and ordering of the family table around the majestic goose.

The results exceeded even our lofty expectations. Delectable confit that is fresh and ready when you are, delicious thinly sliced breast ready for all dishes, and amazing cassoulet for our holiday celebrations - all of these spurred us to want to grow in 2025. And geese are an absolute farmstead celebration of personality, grazing, and joy.

We are offering a limited number of these majestic French Toulouse Geese (with lineage in the peasant flocks of France) for pre-order this year. We need to invest a fair bit in more fencing, so please consider placing a $20 deposit per bird if you are able. If you are not able to at this moment, you can still vow to pre-order a number of geese for your table for holiday season 2025.

These wonderful animals will dress out to be 10-12 lbs each and you will receive back the carcass, heart, liver, gizzard, and all the internal body fat that we will artfully and carefully harvest for you. The body fat is enough to confit the entire body of the goose, which is no small feat.

The price is $14/lb, and we will invoice you for the remainder of the cost at the time of pick-up. Your geese will be ready for pick-up in early November 2025.
