SIMPLE SALAD WITH BREADCRUMBS

Serves 6-8

Takes 10 minutes

Ingredients:

1 tablespoon butter

1/2 cup seasoned bread crumbs

1/4 cup mayonnaise

1/4 cup Greek yogurt

3 tablespoons white wine (or champagne) vinegar

2 teaspoons Dijon mustard

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

6-8 ounces lettuce mix

1-2 ounces pea shoots, torn into bite size pieces, optional 

Directions:

  1. In a medium saute pan, melt butter over medium heat. Add bread crumbs and toast for 3-4 minutes until golden brown. Remove from heat.

  2. In a small bowl, combine mayo, yogurt, vinegar, mustard, salt, and pepper. Whisk until smooth. 

  3. Add greens to individual salad bowls and toss with a tablespoon or two of dressing until well-coated. Top with toasted breadcrumbs right before serving.
