CILANTRO LEMONADE
Adapted from the Herbalist’s Kitchen by Brittany Wood Nickerson
yield: about 6 cups
Ingredients:
2 large bunches cilantro (about 1/4 pound)
1/2 c. lemon juice (from 3-4 lemons)
4 Tbsp. honey
1/2 tsp. salt
4 c. water
Directions:
Combine the cilantro with the lemon juice, honey, salt, and water in a blender and puree for 3 minutes. The drink will be a rich green color with a beautiful white foam on top. You can drink the lemonade as-is with the pulp, or you can strain it through a sieve or tea strainer before serving. It will keep in the refrigerator for up to 3 days.
