BREAKFAST POTATOES

Ingredients:
4 lbs Yukon gold potatoes, diced
1 red bell pepper, diced
1⁄2 onion, diced
1 T coconut oil
1 T garlic powder
1 t black pepper
1 t cumin
1 t chili powder
1 t salt
Directions:
1. Preheat oven to 425°F. Sauté onion and bell pepper in a pan with a little water for 5 minutes, then, set aside in a large mixing bowl.
2. Chop potatoes into cubes. Place in the mixing bowl with the rest of the ingredients and mix together.
3. Spread on 2 baking trays lined with parchment paper and bake about 30-40 minutes, depending on your oven. Rotate the trays half-way through and keep an eye on them until golden brown. Serve and enjoy.
