BOMB MANGO VEGGIE SALAD

This is a vegan recipe

Ingredients:

1 head of romaine lettuce or spring mix

1 zucchini, spiralized or shredded

1 carrot, shredded

1/2 a bell pepper, thinly sliced

1 cup frozen peas, thawed

For the dressing:

1 large, ripe and sweet mango

1/2 an avocado

1 orange, juice of

1 green onion

small handful of fresh dill


Directions:

  1. Dice lettuce and place into a big salad bowl and top with the rest of the veggies.

  2. Blend mango, avocado and orange juice in a blender until smooth. Add in the green onion and dill and pulse blend for a few seconds. Do not over blend or the herbs will get bitter.

  3. Pour dressing over salad and top with a few more dices of green onion and avocado. Optional: add a dash of black pepper and sea veggie dulse! SO GOOD!
