ROASTED KOHLRABI

Ingredients:

2-4 kohlrabi (depending on what share size you have)

1-2 TBSP olive oil

1 clove garlic bulb, mashed and minced very small

1-2 oz parmesan cheese (grated)

Salt and pepper, to taste

Red pepper flakes, if you like spicy

 

Directions:

1.     Preheat oven to 425 degrees.

2.     Cut the kohlrabi into ¼ in thick slices. Pour olive oil, garlic, salt, pepper and pepper flakes over kohlrabi and mix to coat. Spread out in a single layer on a baking sheet.

3.     Bake until browned, 20-25 minutes, flipping once if desired to get even coat of caramelization. Remove from oven, sprinkle with cheese and return to oven for about 5 minutes or until cheese begins to brown. Enjoy!
