RED CORNMEAL WAFFLES

Recipe from Meadowlark Organics

Makes 10-15 waffles

Ingredients:

1 cup Red Flint Whole Grain cornmeal

1 1/2 cups Bolted AP flour

1/2 tsp baking soda

1 tsp salt

3 Tbsp sugar (or maple syrup, honey, etc)

2 1/4 cups milk

2 eggs

6 Tbsp butter, melted

Directions:

Preheat your waffle iron. melt butter and set aside to cool slightly.

Combine the dry ingredients in a mixing bowl. In a second bowl, beat together the milk, eggs, and sweetener. Blend the wet ingredients into the dry, and add the melted butter, taking care to not over-mix. If possible, let the batter sit for 15-30 minutes. The batter will be quite thin, which makes an extra crispy and light waffle.

Cook according to your waffle maker’s instructions. Enjoy!

Notes:

For the AP flour, you can sub bolted or whole wheat Heritage Turkey Red, Spelt, or Pastry flour.

These freeze well!
