GARLICKY SHRIMP & SWISS CHARD
We started making this recipe one summer when we had chard coming out of our ears and very little time to cook during the week. This meal is SUPER simple and the great part is you don’t have to be precise with the ingredients. Use as much or as little shrimp as you want. Raw shrimp works best.
Ingredients:
A bunch of Swiss Chard thinly chopped (including the stems)
4 Stalks Green Garlic or 3-4 Cloves of Garlic
1/2 Pound Raw Shrimp (shelled and deveined)
¼ Cup Olive Oil
Salt and Pepper to taste
Directions:
Preheat Oven to 425 degrees. Toss the greens and shrimp with the olive oil and garlic, spread on a baking sheet (use two if needed – you don’t want to crowd the pan). Bake for 8 minutes, open oven, stir, and bake for another 3-5 minutes. Salt and Pepper to taste.
