SHAVED BRUSSELS SPROUTS SALAD

Ingredients:
1 small onion, finely diced
2 TBSP red wine vinegar
2 TSP ground sumac or zataar (can also substitute lemon juice)
¼ TSP kosher salt, plus extra for seasoning
2 cups shredded brussels sprouts
½ c. pomegranate seeds (can also substitute grapes)
1 small apple, cored and diced
2 TBSP lemon juice
¼ c. olive oil
¾ c. toasted and cooled walnuts, coarsely chopped
Ground chile pepper or smoked paprika, to taste
Directions:
To make the sumac-pickled onions: combine red onion, vinegar and sumac (or substitution) and ¼ TSP salt in a small bowl. Set aside while you prepare the rest of the salad, at least 15 minutes.
Combine all salad ingredients, including the red onions and pickling liquid.
Season to taste with salt, pepper and hot pepper.
