KALE, CHICKEN SAUSAGE & SWEET POTATO HASH
Serves ~4 people
Ingredients:
2 tbsp olive oil / butter / coconut
1 small onion, diced
2 medium sweet potatoes (about 2-3 cups, peeled and chopped into bite-sized pieces)
1 - 14 oz sausage loop, sliced into discs and halved*
2 cups kale, finely chopped
Parmesan cheese
Optional**:
2-4 poached or fried eggs
Instructions:
Place chopped sweet potato into boiling water, and cook for 2-3 minutes. Strain from water. Heat olive oil in a large skillet to medium-high heat. Add onions and cook until just translucent, then add sweet potatoes and sausage. Cook until crisp and brown on the edges. Add kale last and cook until just wilted (about 1-2 minutes). Top with Parmesan cheese.
*I typically use an apple-chicken variety of sausage, but really any flavor will do. Spice it up with some Andouille or Chorizo, or keep it classic with a Polska kielbasa.
**Top your hash with a poached or fried egg! Although still satisfying without, I think it really completes the meal. Poach or fry one egg for each individual you are serving. I'd recommend cooking fresh eggs for any leftovers you keep.
