FRESH PENNE ROSA
Inspired by Noodles and Co. recipe
Serves 2-3
Ingredients:
2 TBSP olive oil
2 cloves garlic, minced
1 medium sweet onion, sliced very thin
1 sweet or hot pepper, minced (if desired)
½ cup fresh mushrooms, chopped
2 lbs. fresh tomatoes, diced
4 stalks kale or chard, thinly sliced
¼ cup heavy cream
½ cup parmesan or feta cheese
8 oz penne pasta
1 cup cooked, chopped chicken (if desired)
Salt!
Directions:
Prepare penne pasta per the package instructions.
Heat oil in wide sauce pan over medium heat. Cook onions until translucent. Add garlic and hot pepper, cook a few minutes until fragrant. Add mushrooms and cook a few more minutes to soak up oil.
Add all the fresh tomatoes and their juices. Turn up the heat until they begin to break down and the juices evaporate. Add salt here to taste, usually around 1 TSP. Also like to add another fresh crushed and minced garlic here just to get a bit more fresh garlic flavor.
Add the greens and heavy cream. Allow to cook a few more minutes until greens are wilted and the cream is incorporated.
Pour over cooked penne, sprinkle heavily with cheese and add chicken for a complete meal. Enjoy!
