DAIKON PANCAKES
These are quick and savory and will disappear as quickly as you can fry them.
Yields about 12 -14, 4-5-inch pancakes
Ingredients:
1 large egg
1/4 cup water
1/2 cup flour
1 teaspoon fish sauce (sub soy sauce for veg version)
1 small fresh hot pepper, minced
1/4 teaspoon salt, more to taste
1 medium daikon, about 2 cups grated on the large holes of a box grater
1/2 onion or 1 leek, thinly sliced
Oil for pan frying
Dipping sauce
1 1/2 tablespoons soy sauce
2 teaspoons lime juice or rice vinegar
pinch or two chili flakes
Directions:
In a medium bowl whisk the egg with flour, water, fish sauce and salt. Stir in onion, hot pepper and grated daikon.
Mix soy sauce, lime juice (or vinegar) with chili flakes in a small bowl and set aside.
Heat about 1 tablespoon oil in a large skillet over medium-high heat. When the oil is hot add spoonfuls of the batter to the pan and cook pancakes, about 2-3 minutes on each side until nicely browned. Add more oil as needed. Taste the first pancake for salt and add salt to the remaining batter, as needed. Serve hot or warm with dipping sauce.
