Griebenschmalz (Rendered fat with cracklins)
Ingredients:
Back fat - 2 lbs
1 Apple
1 Onion
Method:
Dice fat to 1/4” cubes, or run through grinder on 1/4” plate
Render fat in a large skillet over low heat
Stir fat intermittently to aid in melting and browning of cracklins. This rendering should take at least an hour.
Dice the apple and onion finely and add them at this time. Let them cook for 15 minutes or more.
Pour into an earthen vessel for storage, and keep in refrigeration for months.
Spread onto toasted bread & salt, or add to any dish to start the cooking process.
