Griebenschmalz (Rendered fat with cracklins)

Ingredients:

  • Back fat - 2 lbs

  • 1 Apple

  • 1 Onion

Method:

  • Dice fat to 1/4” cubes, or run through grinder on 1/4” plate

  • Render fat in a large skillet over low heat

  • Stir fat intermittently to aid in melting and browning of cracklins. This rendering should take at least an hour.

  • Dice the apple and onion finely and add them at this time. Let them cook for 15 minutes or more.

  • Pour into an earthen vessel for storage, and keep in refrigeration for months.

  • Spread onto toasted bread & salt, or add to any dish to start the cooking process.
