FRUITY SUMMER SALAD

Recipe by The Leek and the Carrot

Serves 2-4

Takes 10 minutes


Ingredients:

1 head lettuce, leaves washed and torn

1 cucumber, quartered and thinly sliced

1 peach, diced

1/2 cup blueberries, optional

1/2 cup candied pecans (I used Fortune Favors)

1 ounce crumbled blue cheese

Balsamic dressing (bottle, or use recipe below)

Balsamic Dressing

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon mayonnaise

1/2 teaspoon Dijon mustard

1/2 teaspoon maple syrup

1/8 teaspoon kosher salt

Pinch freshly ground black pepper


Directions:

  1. Combine all dressing ingredients in a small mason jar and shake until smooth.

  2. In salad bowls, divide lettuce and cucumbers. Drizzle with dressing and toss gently. Top with peaches, blueberries, nuts, and blue cheese.
