PEPPERY BEET, GREEN GARLIC & GOAT CHEESE TART
Ingredients:
1 Pie Crust/Tart (use your own recipe or store bought, or try this one that I like)
3-4 Small/Medium Roasted Beets (with skin removed) sliced thinly
8-10 oz Goat Cheese (I like Dreamfarm), or another soft cheese, at room temperature
1 Tablespoon Olive Oil + a drizzle
2-3 Stalks Green Garlic, sliced
1 Tsp Pepper
Sprinkle of Salt
Directions:
Preheat oven to 350 degrees. Do not pre-bake your crust/tart. Get your crust ready to go in a 9-inch pie or tart pan. In a small bowl, stir the cheese, olive oil and green garlic together. Sprinkle with a bit of salt and about a teaspoon of pepper. Spread the goat cheese in the crust (if it isn’t spreadable enough, drop by large spoonfuls and press down – it will soften up in the oven). Arrange the beets on the top of the tart, drizzle with olive oil and give it another sprinkle of salt and pepper. Bake for 40-50 minutes (the crust should be a nice golden brown color).
