SALAD WITH CUCUMBERS, CHERRY TOMATOES AND RANCHY DRESSING

Serves 2-6 (based on amount of lettuce and how many sides you have)

Takes 10 minutes


Ingredients:

1-2 heads green leaf lettuce, cut or torn into bite-size pieces

1 cucumber, quartered and sliced

1-2 cups halved cherry tomatoes

Ranchy dressing (see below)

Freshly ground black pepper

2 tablespoons fresh chives, minced, optional

Ranchy Dressing

1/2 cup sour cream or whole fat Greek yogurt (or 1/4 cup of each)

1/4 cup extra-virgin olive oil

3 tablespoons milk

2 tablespoons white wine vinegar

1 tablespoon mayonnaise

1/2 shallot, minced

1 garlic clove, minced

1/2 teaspoon kosher salt

1 teaspoon honey

2 teaspoons dried dill


Directions:

  1. To prepare ranchy dressing, combine all ingredients in a mason jar (or medium bowl) and shake (or whisk) to combine. You will likely have more dressing than you need for this recipe, so reserve extra for another salad later in the week!

  2. Divide lettuce into bowls. Top with cucumbers and cherry tomatoes. Add spoonfuls of ranchy dressing (it will likely be too thick to pour), starting with just a couple and tossing to coat before adding more. Top with freshly ground black pepper and chives.
