SHEET FAJITAS PAN WITH GROUND BEEF

Serves 4-6
Takes 50 minutes
Ingredients:
3 ripe peppers, seeded and cut into strips
2 yellow onions, halved and cut into thick slices
2 tablespoons avocado oil
1 teaspoon kosher salt, divided
1/4 teaspoon freshly ground black pepper
1 pound ground beef
2 garlic cloves, minced
1/4 cup water
2 teaspoons cumin
2 teaspoon chili powder
1/2 teaspoon ground coriander
1/4 teaspoon cayenne powder
9-12 small tortillas, warmed
1 cup shredded cheddar cheese, optional
Fresh salsa (see recipe below), optional
Directions:
Preheat oven to 375 degrees.
On a large baking sheet, toss peppers and onions with oil, 1/2 teaspoon salt, and pepper. Roast for 20 minutes, stir, and cook for 20 more minutes until well-softened and browned in spots.
When peppers and onions have about ten minutes, heat a large skillet over medium heat. Add ground beef and remaining 1/2 teaspoon salt. Cook over medium heat until browned, about 10 minutes. Reduce heat to medium low, add garlic, and saute for 2 minutes. Add water and spices, and saute 3 minutes more.
Serve ground beef and roasted peppers and onions on warmed tortillas with shredded cheese and fresh salsa, if using.
Fresh salsa:
1 cup diced tomatoes
1 small jalapeno, seeded and diced
1/4 cup finely chopped onion
1 garlic clove, minced
1/2 lime, juiced
1/2 teaspoon kosher salt
In a small bowl, combine all ingredients. Taste and adjust lime and salt as desired.
