MARINATED TOMATOES WITH BURRATA AND FOCCACIA

Recipe by the Leek and the Carrot

Takes 10 minutes

Serves 2 for lunch or 4 for a dinner appetizer or side dish


Ingredients:

4 cups cherry tomatoes, halved if small, quartered if large

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

1-2 teaspoon fresh thyme leaves

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper flakes

1/4 teaspoon red pepper flakes

8 ounces burrata 

Toasted focaccia (my favorite homemade recipe here) or sourdough, or baked crostini


Directions:

  1. In a large bowl, combine cherry tomatoes, olive oil, balsamic, honey, thyme, salt, pepper and red pepper flakes. 

  2. Place burrata in a large serving bowl. Cover with tomato mixture. Serve with your favorite toasty bread.
