CUCUMBER CELERY TOMATO SALAD WITH SWEET FISH SAUCE DRESSING AND CRUNCHIES

Serves 2-4

Takes 15 minutes


Ingredients:

2 tablespoons fish sauce

2 tablespoons rice wine vinegar

2 tablespoons sugar

1-2 cucumber, cut in half and cut into thin diagonal slices

4 stalks celery, very thinly sliced

3 cups halved cherry tomatoes (about a pint and a half)

1-2 leeks (dark green leaves removed), thinly sliced

1/2 teaspoon black pepper

1/2 cup salted peanuts

1/4 cup fried shallots (or onions)


Directions:

  1. In a half pint mason jar, combine sugar, fish sauce, and vinegar. Shake vigorously until the sugar dissolves. If you don’t have a mason jar, whisking ingredients in a small bowl will also work, it’s just a little harder to get the sugar to incorporate.

  2. In a large bowl, combine cucumbers, celery, tomatoes, and leeks. Pour fish sauce dressing over vegetables and season with black pepper. Sprinkle with peanuts and shallots right before serving.
