BIBB LETTUCE SALAD WITH BREADCRUMBS & HERB DRESSING

Loosely adapted from Bon Appetit

Serves 4-6

Takes 30 minutes

Ingredients:

8 slices bacon

1-1/4 cups panko breadcrumbs

1/2 teaspoon kosher salt, divided

1/2 cup Greek yogurt

1/3 cup mayonnaise

2 tablespoons fresh lemon juice

1 green garlic stalk, white and pale green parts, minced

1/4 cup each minced dill and chives (or mix it up with other herbs)

10 twists freshly ground black pepper

2 heads lettuce (bibb, if available), leaves washed, dried, and roughly chopped

1 bunch radishes, greens removed and thinly sliced

Directions:

  1. Place bacon on a baking sheet and place into a cold oven. Set temperature to 400 degrees F. Check it at 12 minutes cooking time. It may take up to 20 minutes based on the thickness of the bacon. Remove to a cutting board and dice.

  2. Remove all but 2 tablespoons bacon grease from pan. Add breadcrumbs to bacon grease and toss until coated with a spatula. Sprinkle with 1/4 teaspoon salt. Bake until golden brown, checking every minute. It should take 2-4 minutes. Set aside to cool.

  3. Meanwhile, prepare dressing by combining yogurt, mayonnaise, lemon juice, green garlic, dill, chives, pepper, and remaining 1/2 teaspoon salt. Which until smooth. Taste and adjust seasonings as desired.

  4. When ready to eat, divide lettuce among bowls. Top with a generous amount of dressing followed by radishes, and reserved bacon and breadcrumbs.
