SIMPLE ROASTED ACORN SQUASH

Ingredients:
2 acorn squash
2 tablespoons olive oil
½ teaspoon Kosher salt
¼ teaspoon freshly ground black pepper
1 tablespoon maple syrup
½ teaspoon red pepper flakes
Directions:
Preheat oven to 425 degrees.
Cut acorn squash in half. Remove seeds and slice squash into ½-inch thick segments.
Add acorn squash to a large baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast for 30 minutes.
Remove pan from oven, flip all squash slices and drizzle with maple syrup and red pepper flakes. Roast 15-20 minutes further until browned on each side and tender in the middle.
