NAPA CABBAGE SLAW WITH HERBS

The mint or some tender herb makes this salad vibrant and the yogurt dressing adds a refreshing tang. Scale this as you’d like. If you have a big crowd use a whole head of cabbage.

Serves 4-6

Ingredients:

½ head napa cabbage, washed, dried and leaves cut in half lengthwise and then cut crosswise into ½-1-inch strips (about 8 cups of cabbage)

1/2 – 1 cup chopped mint, cilantro, dill, thyme, basil or parsley leaves or any combination

3-4 scallions, thinly sliced

1-2  Serrano chilies, minced or a few pinches chili flakes (optional)

Dressing:

3 tablespoons whole milk Greek yogurt or vegan yogurt

2 tablespoons mayonnaise or more yogurt

2 tablespoons olive oil

Juice of 1 lime or 2 tablespoons wine vinegar, more to taste

3-4 cloves new garlic, minced and then mashed with coarse sea salt with the side of a chef’s knife

Freshly ground pepper and more sea salt

 

Directions:

Put all the vegetables in a large salad bowl. Mix the dressing ingredients in a small bowl and pour over salad. Toss well. Let sit for a few minutes and toss again and taste and adjust seasoning with salt and/or lime juice, etc.
