MARINATED SUMMER SQUASH & RAW SWEET CORN SALSA

This is obviously not a meal by itself. We’ve been making it a meal by whipping up a big batch of homemade queso with whatever hot peppers we’ve got an overabundance of and eat nachos for dinner with queso, this salsa, and sometimes some black beans. Perfection!
Takes 20 minutes
Makes 6 cups of salsa
Ingredients:
1 pound summer squash, cut into small cubes
1/4 cup olive oil
1 tablespoon white wine vinegar
1/2 teaspoon sugar
1/2 teaspoon kosher salt
1/2 teaspoon red pepper flakes
10 twists freshly ground black pepper
4 ears sweet corn, kernals cut from cob
1 cipollini onion, diced
Directions:
Combine summer squash, olive oil, vinegar, sugar, salt, red pepper flakes and pepper in a large bowl. Let sit to marinate for at least 15 minutes. This is a good time to remove the kernels from your corn, dice your onion and maybe make that queso (see note at top).
Add corn and onion to the squash mixture. Devour immediately with chips.
