CARROT & TURNIP COLESLAW

Serves 4
Takes 15 minutes

Ingredients:
2 turnips, peeled and shredded
3-4 carrots, peeled and shredded
3 garlic cloves, minced
1/4 cup olive oil
2 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
1 tablespoon maple syrup
1 tablespoon poppy seeds
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper


Directions:

  1. Place turnips and carrots in a large bowl.

  2. In a small bowl, whisk together remaining ingredients until smooth and creamy. Add to carrots and turnips, and stir to combine. Serve at room temperature.
