SESAME CUCUMBER SALAD
Serves 3-4
This is a refreshing salad that will keep in your refrigerator for a week. It is great to nosh on when you want a quick snack.
Ingredients:
Dressing:
¼ C. Seasoned Rice Vinegar
1 teas. Honey or Agave syrup
1 teas. Toasted Sesame Oil
½ teas. Chili Flakes
¼ teas. Salt
Salad:
2 C. Cucumbers, thinly sliced
1 scallion, thinly sliced
Sesame seeds for garnish
Instructions:
Put the sliced cucumbers and red onion in a bowl.
Combine all the dressing ingredients together, make sure the honey is dissolved (If you don’t want it spicy, omit the chili flakes). Then pour the dressing over the prepared cucumber and onion, stir to combine. Finish by sprinkling with sesame seeds.
Keeps one week in the refrigerator.
