CELERY SALAD WITH LEMON, PARMESAN & WALNUTS

Serves 4-6

Takes 30 minutes

Ingredients:

1 head celery

1 large (red) onion, thinly sliced

1/2 lemon, juiced

1/2 teaspoon salt, plus a sprinkle

1/2 cup olive oil, plus a drizzle

1 cup walnuts

Freshly ground black pepper

3 ounces shaved parmesan


Directions:

  1. Prepare celery by separating stalks from leaves and removing any thin stems. Thinly slice the stalks and place in a large bowl with onion. Add lemon juice and salt and let sit for 20 minutes.

  2. Roughly chop celery leaves and set aside.

  3. Toast walnuts and then drizzle with olive oil and a sprinkle of salt and pepper. 

  4. Once celery and onion have had time to rest in the lemon, add celery leaves and olive oil. Toss to combine. Serve with toasted season walnuts and shaved parmesan.
