CREAMY RED PEPPER SALAD

This is a vegan recipe

Ingredients:

2 heads of red leaf lettuce, chopped

2 large handfuls of arugula

1/2 a red bell pepper, diced

1 tomato, diced

1/4 cup sea veggie dulse

For the dressing

1/2 an avocado

1/4 cup of diced mango

2 tbsp lime juice

1/2 tsp turmeric


Directions:

  1. Place the lettuce, arugula, bell pepper and tomato into a large salad bowl. Tear the sea veggie dulse and top over salad. Nori sheets are a great substitute in this salad if you don’t have dulse.

  2. Blend all the dressing ingredients in a high speed blender until smooth. Pour over salad and devour the healthy goodness.
