HEIRLOOM TOMATO CAPRESE SALAD

Simple, classic and lovely on a hot-summer day! Fresh mozzarella and ripe tomatoes are a must! Make as much or as little as you’d like. It also makes a great sandwich filling if you have some leftover or want to turn it into a meal.

Ingredients:

2, 2-ounce balls fresh mozzarella

2 medium, perfectly ripe heirloom tomatoes

Handful basil leaves

Salt

Olive oil

 

Directions:

1. Slice the mozzarella into fairly thin rounds. Slice the tomatoes into about 1/2-inch slices on the “equator”/crosswise, not lengthwise

2. Arrange the sliced mozzarella and tomatoes and basil leaves partially overlapping on a serving dish. Salt each tomato slice. Drizzle all of it with olive oil. Serve!
