FRESH GARDEN SUPER SALAD
Adapted from FairShare’s Farm-Fresh and Fast cookbook
Ingredients:
4 c. combined chopped veggies of your choice (green beans, cherry tomatoes, sweet peppers, kale and cucumber are all good options)
1/2 onion, chopped
1 c. chopped kale or chard
4 oz feta, crumbled
4 TBSP roasted pumpkin seeds
2 TBSP olive oil
1 TBSP balsamic or white wine vinegar
Salt and pepper
Directions:
Steam green beans until tender, if using, and cool them in an ice water bath.
Combine the oil and vinegar until well combined. Combine the remaining ingredients and cooled beans in a large bowl. Toss with oil/vinegar mixture. Season to taste.
