SPRING SALAD WITH TURNIPS, BACON & BREADCRUMBS

Recipe by the Leek and the Carrot

Serves 2-4

Takes 25 minutes

Ingredients:

3 small heads lettuce, washed and leaves separated

4-5 turnips, very thinly sliced

1/3 cup whole fat Greek yogurt

1/4 cup mayonnaise

2 tablespoons whole milk

1 tablespoon apple cider vinegar

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper, plus more for serving

5 pieces bacon, cooked until crisp

2 ounces blue cheese, crumbled

1/2 cup panko breadcrumbs, toasted


Directions:

  1. In a small bowl, whisk together yogurt, mayonnaise, milk, vinegar, salt, and pepper until smooth. 

  2. Place lettuce into 2-4 salad bowls. Divide turnips among salads and drizzle evenly with dressing. Top with bacon, blue cheese, and breadcrumbs. Season with additional black pepper to taste.
