Spice Pumpkin and Butternut Squash Soup

Such a warm and delicious fall soup! 

3 cups vegetable stock

1 cup pumpkin, peeled and chopped into cubes

1 cup butternut squash, peeled and chopped into cubes

1 small zucchini, sliced

1 large carrot, sliced

1 celery stalk, sliced

1 small onion, chopped

1 pinch cayenne pepper

1 T fresh ginger, finely chopped

1/4 t ground nutmeg

1/8 t ground cinnamon

1 T maple syrup

1 t salt

1/4 t ground pepper


Place all the ingredients in a large pot on high heat until boiling, then simmer for 1 hour. Once the pumpkin and squash are very tender, either mash or use an immersion blender to puree. I like to add a little cream once it's in my bowl to cut the spice a bit!
