Garlic Scape Pesto
Delicious on pasta, bread or pepper scoops. I like to throw in spinach if I have it and you can substitute any nut you like instead. Skip the cheese for a paleo pesto!
1 cup garlic scapes, chopped
1/4 cup walnuts
1/2 cup olive oil
1/4 cup hard cheese (Sartori montamore!)
salt and pepper to taste
Add the scapes and walnuts to a food processor or blender and pulse a few times to chop it all up. Turn it on and keep it running, while slowly adding the olive oil until fully incorporated. Add the cheese, salt and pepper and pulse to mix.
