Butternut Squash Salad

 

1 large butternut squash, peeled and cubed

1 sweet or red onion, chopped

1/2 cup apple cider vinegar

1/4 cup olive oil

1/4 white wine vinegar

2 T dried parsley

 

Boil butternut squash for 15 minutes or until slightly soft. Drain in a colander for a few minutes.

Mix the vinegars, oil, chopped onion and parsley until combined. Pour over the butternut squash and mix. You can let the butternut squash cool completely first or have a warm salad and pour the mixture on right away.
