Arugula-Basil Pesto
2 cups arugula
1/2 cup walnuts, toasted
1/4 cup fresh basil
3 cloves garlic
3 T olive oil
1/3 grated romano cheese
Combine arugula, walnuts, basil, garlic and olive oil in a food processor or blender. Process until the nuts are finely chopped. Add the cheese and extra olive oil, if needed.
Enjoy on pasta, crackers or veggies!
